Kathy,s Meat Loaf



Meat Loaf


1 lb Hamberger 1 tsp Italin season

2 garlic bulbs 2 table spoon diced bell pepper

salt & pepper to taste 1 cup bread crumbs or crackers

1 small can of tomatoe paste 1 LG Onion diced

2 Eggs 1 tsp chilli powder

Mix all togather well.make sure you set your oven to (375)F.

Put in your 9 in.baking pan or a lg.cast iron skillet,pour ketchup on top cover with foil for the first 35 to 40 min.then unwrap and finish cooking

Kielbasa Pesto Pasta with Veggies : Budget Friendly Mealtime




The first part is how to make Pesto. You can use fresh herbs I just didn't have any. I don't have a food processor or blender but you could certainly use those. I have a magic bullet which worked fine.

3 teaspoon dried basil
1- 1 1/2 spoonful chopped garlic (I buy chopped garlic in the jar and keep in fridge)
2 teaspoon dried Italian seasoning
1/4 teaspoon black pepper
3-4 tablespoon Parmesan cheese
Handful or two of fresh spinach
Olive oil (I used extra virgin olive oil)

First put all dried herbs in and blend they will become a fine powder. Next add garlic, fresh spinach, and Parmesan blend together. Add a few drizzles of oil and blend. Continue to add oil until you reach the desired consistency. I made more of a paste. This is something you can adjust amounts based on your personal tastes. I added spinach because I had some left but you could leave it out.

       Kielbasa Pesto Pasta with veggies

2 packages polish kielbasa sliced
1 lg bag pasta of your choice(or two small bags)
Pesto sauce (homemade or store bought)
Frozen broccoli & cauliflower

 1. Place sliced kielbasa in frying pan and cook until browned. The pan will darken as it browns, you can add a little water to the pan it will give them a blackened look. I drained grease off a couple times and added just a touch of water a couple times until it was to my liking.




2. While cooking meat boil water for pasta and cook as directed on package.
3. Cook frozen veggies. (I use a microwave steamer)
4. Drain pasta put back in pan, add browned kielbasa and stir. Add pesto a spoonful at a time and mix together until evenly coated. Add as little or as much as you like.




Dinner is done. Serve with veggies on the side or mix them in. This could easily be a one pot meal.

Idahoan Potatoes Recipes

I love to cook and Southern Food is my Specialty, but I am always willing to try new things. Desserts are one of my favorites to create, but being Southern you will find I use potatoes in many of my recipes and after recently finding these Idahoan Potatoes on Sale in the Grocery, I wanted to find new recipes and ways to use them

 

 

 

 

Idahoan Potatoes recipes

Here are a couple of great recipes using Idahoan Instant potatoes, I hope you find them as wonderful as i do!


Shrimpy Mashed
Ingredients
•        2 packages Idahoan® Roasted Garlic Flavored Mashed Potatoes
•        1 cup shredded cheddar cheese
•        1 cup shredded Monterey Jack
•        1/2 cup sour cream
•        2 cups peeled and sauteed shrimp
•        paprika
Instructions
Prepare potatoes according to package directions. Saute peeled and deveined shrimp in olive oil. Add cheeses, sour cream, cooked shrimp to mashed potatoes and fold gently. Spray a glass baking dish with olive oil and add mixture. Bake at 350° for 25 minutes

Cheesy Bakes
Ingredients
•        1 package Farmhouse Fix'ns Cheesy Hash Browns
•        2 tbsp pico de gallo salsa
•        1 package bacon pieces
Instructions
Prepare hash browns and let stand for 5 to 8 minutes. Add bacon pieces and pico de gallo salsa. Spray muffin tin with cooking oil (we like olive), fill muffin tins with mixture and bake for 20 minutes at 450 degrees or until set and slightly browned on top. Run a knife around the top of the Cheesy Bakes, place a baking sheet on top of them and carefully flip over so the bakes are resting on the baking sheet. Serve them warm with a hot cup of coffee!

Au Gratin Mexicali
Ingredients
•        1 package Au Gratin Homestyle Casserole
•        1/2 cup chunky style salsa
•        1/2 cup shredded Mexican cheese
Instructions
Prepare potatoes according to directions and add salsa. Add shredded cheese five minutes before end of bake time.

Fiesta Au Gratin
Ingredients
•        1 package Idahoan® Au Gratin Homestyle Casserole
•        3/4 cup chunky style salsa
•        1 small can corn
•        1/2 cup shredded Mexican cheese
•        1 small can diced chicken - drained
Instructions
Prepare 1 package of Idahoan Au Gratin Homestyle Casserole according to stovetop or oven directions. Add all ingredients in the last 5 minutes of cook time. Finish cooking until all ingredients are heated through and sauce is thickened. Top with crushed tortilla chips.

Carlton's Scalloped Potatoes
Ingredients
•        1 package Idahoan® Scalloped Homestyle Casserole
•        1/2 cup shredded Romano cheese
•        1/4 prepared pesto sauce
•        1 tbsp. finely chopped sun dried tomatoes
•        optional: 1/2 cup drained artichoke hearts
Instructions
Prepare potatoes according to package directions. Add pesto and tomatoes and bake. Add shredded Roman cheese 5 minutes before done baking and bake until golden brown.

Spicy Crackers

Spicy Crackers
  


       1 1\3 cup canola oil
        3 tbs dry ranch dressing mix hidden valley
        2 tbs crusted red pepper flakes ,tones
       

       Mix together well in a large mixing bowl with air tight lid.
      Add 1 whole box Zesta cracker,s or what ever you use ,
     put lid on and roll around  and turn upside down,till crackers absorb
    all your seasoning about 20 min.



    Crackers are ready to eat.
  do not shake the bowl you will break your crackers up
  Make sure you use Canola Oil only
